RAKKAN Ramen is a borderless ramen restaurant concept, serving ramen that everyone can enjoy. Our menu features an exciting range of authentic, Healthy and delicious ramen.
We use 100% plant-based broth for all our ramen soup. Unlike other ramen restaurants, we don’t use any pork or chicken bones. This gives us a number of distinct advantages in today’s market: we can offer a creative and diverse menu, we can offer health-oriented dishes, and we can cater to vegan customers, yet still possess that rich, thick flavored broth many ramen fanatics desire.
Three Merits
1) Using 100% plant-based broth means low ingredients costs. In fact, our costs ratio is around 30% less than ramen restaurants using animal-derived ingredients for their broth. We do not take food cost margins.

2) Using 100% plant-based broth means less burdensome hygiene management, such as cleaning. This translates into lower capital investment requirements, since we need fewer ducts, for example, than other ramen restaurants. Quicker cooking time (our soup takes just one hour) also means lower gas costs: more than 65% less than other ramen restaurants.

3) Using 100% plant-based broth means no need for veteran chefs. Our authentic-tasting ramen dishes can be made perfectly and consistently, even by beginners.
Other ramen restaurants use broth derived from pork or chicken bones which can take more than 10 hours to prepare, but our broth only takes a little over 1 hour while keeping the ramen flavorful. This sort of slow cooking requires complex operations, resulting in the commercial pressure of high labor costs. In contrast, Rakkan Ramen broth takes just one hour to cook, and our a la carte dishes are equally simple to prepare. All this makes it possible to reduce labour costs up to 25%.
